HI this is one of my favourite things to make and we have it alot. I really like quiche, not the shop bought stuff but home made quiche.
The basic idea is make a pastry case to fit in your flan/quiche dish. This is easier than it sounds. 8oz flour to 4oz margarine and a bit of water makes about 1 quiche base. Quick tip use the stork in a tub it rubs in in about 10 seconds. Rub in margarine to flour and then add water til its a ball. Put flour on surface and roll out to desired thickness. PLace in flan dish and trim edges. Thats it thats your base done. You can part bake it ie put it in the oven for about 10 mins to crisp it up, I tend not to bother.
Next decide what you are putting in it, we do ham and sweetcorn and cheese or broccolli and cheese or whatever you like. place vegetables in first then meet then cheese. Don't overfill leave room around everything for your egg mix. For egg mix make up a scrambled egg consistency and then beat of egg and milk, pour over quiche but not right to the top as it rises and will spill over the edge. Then sprinbkle some chilli powder or cayenne pepper on the top (gives it a zing but dont use too much just a sprinkle), and cook on gas mark 7 for about 30-40 minutes. You can even freeze it for later. They're so easy I make a few at once, then we have a ready meal for a different day.
We also make mini quiches follow the same rules but use a jam tart tray and use a biscuit cutter of the right size to cut out your bases. put chopped up fillings and cheese in then pour in your egg mix and sprinkle on the chill/cayenne pepper. These cook much quicker sometimes in 12-15 mins. Again these freeze I do them in batches and they make great finger food for the kids, that's if the adults don't scoff them first :-)
