Saw a budget post on spacebats and so am posting my corned beef pasta recipee here.
Yuck I hear you cry, well I can honestly say I didn’t like corned beef either til I tried this.
You will need
1 onion, 1 tin corned beef, peppers (can be frozen one), some frozen sweetcorn, 2 tins chopped tomatoes (or like me plum ones cut up, same thing just cheaper and you can cut them up in the pan), some mixed herbs and any other veggies you like or have left over, a squidge of tomato puree (i like sundried tomato paste) and possibly some red wine if you have it left over but if not don't worry. For topping add some grated cheese and of course you’ll need pasta (i find the penne works well for this as the filling goes in the pasta and this is tesco value anyway)
Right chop and fry onion and then cut up corned beef into chunks and fry until soft, then pretty much add everything else except the cheese and pasta. Meanwhile cook your pasta and when both are cooked, mix together and top with some cheese if you want to pop under a grill to brown. This is so scrummy and the sauce is actually enough for 2 meals if you add enough veggies. I usually mix half and then freeze the rest for another day. It costs about £1 to make 2 meals for this. It goes great with a fresh baguette and make your own garlic bread (butter and garlic bread seasoning, chop up and warm through in oven)
