choc coconut crunch

This has got to be one of my easiest recipes and if someone phones up saying they’re coming round in an hour this is on the table in no time. I’m doing it in the microwave but you can melt stuff in a pan.

4oz butter/margarine (I prefer it with butter)

2 oz sugar

4oz SR flour

2 oz desiccated coconut

2 teaspoons of cocoa powder

for topping 4 oz icing sugar and 1 teaspoon cocoa powder

heat oven to 180 degrees/gas mark4. Grease a baking tray (with a lip), melt butter and sugar then stir in rest of ingredients (not topping) then press into your baking sheet (the small ones from tesco/asda), Make sure its all spread out into all the corners so you have a solid sheet (using a metal spoon), bake in the oven for about 15 mins. Once cooked prick with a fork and make up the icing and ice immediately. Icing will set and its very scrummy.
